Pupcakes

Ingredients:
2 cups shredded carrots
3 eggs
1/2 cup applesauce, unsweetened
2 tsp. cinnamon
1/2 cup rolled oats
3 cups whole wheat flour
Directions:
Preheat oven to 350° F
Lightly spray cups of muffin tin.
In a large bowl stir together the carrots, eggs and applesauce. Set aside.
In another medium bowl whisk together the cinnamon, oats and flour.
Slowly mix in the dry ingredients. Stir until well blended.
Spoon mixture into muffin tin. The dough will be thick, so you may wet your fingers to press the dough into place.
The dog cupcake will not rise very much, so do not worry about over filling the muffin tin.
Bake for 25 minutes.
Cool completely on a wire rack before frosting or serving.

Pupcakes For A Cause is an effort to raise money for the thousands of homeless dogs in the DC/Metro area. These healthy “pupcakes” are made with whole wheat, peanut butter and shredded carrots and are sold at events held by local DC animal rescue organizations. 100% of the profit is donated to the shelter that put on the event. Cupcakes, made by Confessions of a Cupcake, will also be available for the dog owners at the events.

     We are happy to have joined with Lucky Dog Animal Rescue in Washington D.C. They have allowed us to bring and sell our cupcakes and pupcakes at several of their events, including a wine tasting extravaganza and Petfiesta in Reston Town Center. At these events, we set up a table and raise money that is given directly back to Lucky Dog to help cover costs of all types. These costs include everything from vet bills, supplies such as food, cages and blankets and transportation to and from adoption events.
     The cupcakes and pupcakes are both unique. The cupcakes, will have fondant designs that have to do with dogs. For example, one may have a dog, one may have a bone or a dog house, another with a bowl of puppy food. They are done in bright colors to catch the attention of the event attendee, so that they are drawn in and will buy them to help the homeless dogs. We’re so happy with it, that we thought we’d share it with you! Ingredients:

8 oz. low fat cream cheese, softened
1/4 cup applesauce, unsweetened
Directions:
Blend both ingredients with a hand mixer until well blended.
Spoon into a pastry bag for easy decorating.
